Sweet Cherry Blondies

Cherry Orange Chicken

Mixed Cherry Vegetable Salad

Sweet Cherry Blondies
(One inch squares)

1 1/3 cups flour
1 tsp baking powder
1 1/3 cups light brown sugar
½ tsp salt
½ cup vegetable oil
2 eggs
1 tsp vanilla
1 cup pitted fresh dark cherries
½ cup chopped pecans

Combine flour, brown sugar, baking powder, salt, oil, eggs and vanilla with electric beater until blended for 1 minute at medium speed. It will be thick.

Spread half the batter in oiled and flowered 9” baking pan. Toss cherries in small amount of flour and spread over batter. Spread remaining batter over cherries. Sprinkle pecans on top.

Bake at 325 F for 30-35 minutes. Let cool and cut into 16 squares.

Cherry Orange Chicken

4-6 pounds of chicken fryers cut up.
4 tbsp butter or margarine
1 cup brown sugar
¼ tsp ground ginger
½ tsp orange zest
½ cup orange juice
1 lb. pitted dark sweet cherries

Place chicken in large baking pan. Pour melted butter over chicken. Combine brown sugar, orange juice, orange zest and ginger and blend. Pour over chicken. Bake in preheated oven at 350F. for 45 minutes. Remove and add cherries, then return to the oven for 30 minutes more, or until chicken is golden brown and tender.

Mixes Cherry Vegetable Salad

2 cups of fine julienne carrots
1 ½ cups of pitted dark sweet cherries, halved
½ cup fine julienne celery
½ cup snow peas, sliced diagonally
¼ cup very thin sliced and quartered sweet onions

3 tbsp very thinly sliced mint leaves
Add dressing of choice or Pacific Rim Dressing

Pacific Rim Dressing
3 tbsp rice vinegar
2 tbsp lime juice
1 tsp vegetable or sesame oil
1 tbsp cilantro
1 tbsp sugar
¾ tsp salt
½ tsp lime zest
dash of hot pepper sauce

Mix together well.

Cherry Clafouti

3 eggs
1 cup milk
½ cup all-purpose flour
¼ cup granulated sugar
1 tsp vanilla
2 cups pitted dark sweet cherries
Powdered sugar

Preheat oven to 350 F. Grease 8 or 9 inch baking dish. Beat eggs, milk, flour, granulated sugar and vanilla with a hand beater until smooth.

Spread cherries in dish. Pour batter over cherries. Bake 45-50 minutes until puffed and golden brown. Sprinkle with powered sugar. Serve warm.

Cherry Butter

2 quarts of pitted cherries
1 cup water
1 cup crushed pineapple
2 tbsp lemon juice
4 cups of sugar

Combine all ingredients. Cook slowly stirring until thick. Cook and enjoy on pancakes or toast.
