Cherry Orange Chicken
4-6 pounds of chicken fryers cut up.
4 tbsp butter or margarine
1 cup brown sugar
¼ tsp ground ginger
½ tsp orange zest
½ cup orange juice
1 lb. pitted dark sweet cherries
Place chicken in large baking pan. Pour melted butter over chicken. Combine brown sugar, orange juice, orange zest and ginger and blend. Pour over chicken. Bake in preheated oven at 350F. for 45 minutes. Remove and add cherries, then return to the oven for 30 minutes more, or until chicken is golden brown and tender.
